Colle degli Ulivi Botticino DOC is made from 40% Barbera, 30% Sangiovese, 20% Marzemino and 10% Schiava Gentile grapes. The Barbera grapes provide acidity and freshness, Sangiovese body and elegance. Marzemino contributes to the colour, and Schiava Gentile bestows fineness and a delicate bouquet. 0.75 L [bg_collapse view=”link” color=”#AD9471″ expand_text=”Read more” collapse_text=”Close” ]The grapes come from our vineyard high in the Botticino municipality hills, at an altitude of 350 metres. The terrain is a marly limestone, with a very high lime percentage, due to the marble of which those hills are made. The grapes are harvested by hand in early October and immediately destemmed. Colle degli Ulivi ferments in large concrete vats, with pigéage and rémontage carried out during maceration. Ageing also takes place in concrete casks to maintain this wine’s freshness, and lasts about 20 months. Our “Botticino” wines are not filtered, so that all their characteristics are kept intact; any sediment which may form is merely a sign that this is truly a genuine product. Through this process, we have achieved a Botticino with a bright ruby red colour, ideal with roast meat or red meat dishes in general, suitable for drinking over a period of five or more years. Things you should know… Our vineyards sit high in the hills, at about 400 metres above sea level, right next to the famous “Botticino classico” marble quarries, with ideal sun exposure and microclimate, and a constant breeze that enables us to grow healthy grapes without chemical treatment. This makes our wine truly genuine, even in terms of sulphite use: for organic wines, the sulphite limit is 100 mg/l, lower than for non-organic wines. However, the amount in our wines is even lower. Moreover, we do not use any type of chemical weedkiller on our soils, which are simply tilled to remove weeds. On every single vine, we apply natural, manual cultivation techniques such as disbudding, leaf-stripping and thinning to select the best bunches, which will repay our care in the cellar with rewards that only nature can give.[/bg_collapse]
